United StatesReviewed May 2026Method v1.1EU/UK: package use-by dates govern
Refrigerate cooked pasta within 2 hours at 40 °F (4 °C) or below and use it within 3 to 4 days. Best freezer quality is about 1–2 months.
The 3–4 days is safety guidance under the USDA leftovers rule; the freezer figure is a quality target. Like rice, cooked pasta left warm can support Bacillus cereus growth — cool it promptly.

Can I freeze it?
Safe, with quality loss
Safe to freeze; plain pasta softens. Sauced pasta bakes and casseroles freeze much better than plain noodles.
Slightly undercooked pasta survives freezing best. Freeze baked pasta dishes assembled — they reheat almost unchanged.
Prepare & portion. Toss plain pasta with a little oil to prevent clumping; portion before freezing.
Package. Freezer bags for plain pasta; foil trays or containers for baked dishes.
Thaw & use. Drop plain frozen pasta into boiling water or sauce for a minute; reheat dishes to 165 °F (74 °C).
Thawing and post-thaw handling
Reheat from frozen in sauce or boiling water, or thaw dishes overnight in the refrigerator. Reheat to 165 °F (74 °C).
Refreezing
Do not refreeze reheated pasta; refrigerator-thawed dishes may be refrozen with quality loss. The general rules are in the refreezing guide and the Refreezing Decision tool.
Common mistakes
Leaving the pasta pot out all evening before refrigerating.
Freezing overcooked pasta — it turns mushy on reheating.
